Go Fish!!

Few Saturdays back we dropped Miss Madison off at my mom's house, picked up my dad, and the 4 of us (Matt, Dad, Mkz & I) headed out ice fishing again.  We were going to a lake that my Dad grew up on and I spent a good chunk of time at as a kid as well.  It's been a long time since I was out there so I was anxious to see it!

Last time we went fishing we were the ONLY ones out on the lake.  This time there was a village out there!!  Never seen anything like it!  Those little ice fishing houses were popped up all over the place, people were walking all over, there were snowmobiles, quads, golf carts everywhere.  How cool!?!?  People were grilling out there even.  I was telling Matt if we had some of those toys I could stay out there all day... grilling on the ice sounds like a ridiculous amount of fun, we could do breakfast food then lunch.  Most of the ice shanties had portable heaters in them to warm up a bit (not that I was cold because we were so bundled up). Cruise around on the snowmobile for awhile, socialize with others, catch fish!


Makenzie was in charge of picking out a spot.  Which got poo-pooed by Matt & Grandpa twice.  Seeing as how we only caught two fish right at the very end... I think you boys ought to listen to Makenzie next time!!

We packed lunch so we could have a wintery picnic on the ice.  My dad had this handy heating cushion that would warm up when you sat on it.


 
Slow day.....  kind of like last time... Matt caught a little dinky fish and I soon caught a little dinky fish after that.  But as usual... we had fun!

St. Patty's Day!




Two years ago we were packing up our old house getting ready to move.  We had all the windows open, were picnicking on our deck, 15 month old Miss Makenzie was happily wandering around and had just learned how to open the doors to let herself out! She was wearing a green & white plaid shorts overalls outfit, still totally bald.  This was the first time that she was able to walk outside by herself since learning to walk and had a LOT to explore.   The temperatures were in the 70’s and low 80’s.  That was so cool to have a brief “summer” before we left that house!  And certainly nice to use that huge deck!!







Flash forward two years…
We still have LOTS of snow around… the high was in the 20’s!  We stayed inside all day. We are in a new house, which we are looking to do some remodeling in.  Makenzie has hair now… not a lot… but some.  (A little less since attempting to cut her hair a few weeks ago.)  She dressed herself in green: tinkerbell pj pants with a dark green sweatshirt!  It was laundry day, while I was advancing the laundry she was “playing” with baby #2.  Really, she was trying to carry her to put her in the laundry basket to push her around.  She dropped her.  Madison was ANGRY, which I don’t blame her one bit.

We had a leprechaun sneak into our house and got into some trouble.  Our milk was green… and so was our cottage cheese!!

Makenzie almost didn’t want to eat her cereal because she wanted to keep the green milk!  She was pretty excited to say the least.  When she saw Madison’s milk she was pretty disappointed that her milk wasn’t green too…. Sorry hunny!  Haha, Mama doesn’t make green milk!  We would probably have some serious problems if that happened!

At the beginning of the month we made a sensory bin of “Leprechan’s Clover Seeds & Leprechan Gold”.  We had 24 lettered clovers that were hidden in there that Makenzie had to find.  Then she had to match them up.  She loves playing in it and she’s learning too!  Win win!  Even Madison got to play in the seeds and LOVED it.  It made a gigantic mess…. But she loved it       .

Honey Dijon Chicken

I've now made this dish a few times and have got to share!!  It is SOOO yummy and one of those meals that taste like you put a lot of effort into it, but really didn't!  It's low fat and has a good chunk of honey in it which is full of antioxidants, that help boost your immune system.  Can't go wrong!

Honey Dijon Chicken, Lemon Garlic Asparagus and Baked Sweet Potato

Honey Dijon Chicken:  (Baked or Crockpot)

Ingredients

3/4 Cup Honey
1/3 Cup Dijon Mustard
2-3 teaspoons of curry powder (depending on how much you like it!)
6 Tablespoons of Melted Butter
Dash of Salt & Pepper
Sprinkle with Red Pepper Flakes (totally optional, yes mom, I did add this when you had it!)

Bag of Chicken, bone in breast, I think it's 3-4 lbs worth.  I got 8 pieces ;-)

(I don't totally thaw the chicken before I start working with it!  Just enough to where I can pull up the skin and pour some of the marinade between the breast and skin.)

Directions

Place chicken in 9 x 13 baking dish bone side down. If you remove the skin or are doing boneless chicken pour marinade over all the chicken.  If not.... use tongs to pull the skin away from the breast and pour some marinade in each pocket you've made!  Once you've done that to each breast, pour the remaining marinade over the top.
Cover the dish with aluminum foil and let marinade for at least an hour!  (I typically throw mine right in the oven to finish thawing and set the delay start timer on the oven.)

Bake 375 for 45 mins WITH FOIL ON! 

After 45 mins of baking, pull foil OFF and continue for another 30 mins. You could make this in a crock pot too.  But you won't get a nice crispy top like you do if you bake it.  BUT I am sure it would still taste just as good.


This makes great leftovers too... enjoy!

Up to No GOOD!


I'm finishing up on the computer and I hear Madison wake up.  I hurry to finish up when I hear the girls laughing!  No one can make Madison laugh like Makenzie.  Instead of rushing I quietly take my time listening.

Once done, I head down to see what kind of trouble the two are up to.  As I get closer I could hear the giggles again.  I stopped and just listened.  SO precious!  I inch forward and Oh NO!  You have got to be kidding me!! 


Haha, the first thing I see is the outfit that I put Madison in that morning rumpled up on the floor.  Next to it is one of her blankets and next to that is a full diaper, followed by more blankets... where's Makenzie!?!?  I peak into the crib to quick check on Madison and whoa!  Four eyes are looking at me with two great big smiles!!  Typical me fashion, I say DON'T MOVE!  And then run to get the camera.


Me: Weren't you afraid Madison was going to pee or poop on you Makenzie?
Mkz: Um... no!
Me: What were you doing!?!?
Mkz: Taking Madison's clothes off!  See!!  I can do it!!
Me: (Oh boy.) You aren't suppose to climb in there.  You will break it.
Mkz: Nope, I won't Mommy!  I promise!!

Gosh I love my life!!  Not a day passes where I don't shake my head in amazement in all I have been given.

An Icey Adventure



Not like sliding on the road losing control of your car ice adventure.  (Which has been a frequent occurrence to many lately!)  I’m talking heading out TO the ice.  

Last Saturday, after breakfast out and then a quick trip to the bakery for donuts for Sunday morning, we went out on an adventure that we won’t soon forget!!  Makenzie and I went out ice fishing for the first time.  The winters here really haven’t been that good and heading out onto a lake isn’t the brightest idea some times!  But with the way this winter has gone, there is some MAJOR ice out on our lakes!  Matt packed our gear and headed out in search of wax worms.  Let me tell you… difficult to find those little buggers.  We ended up calling and driving around for almost an hour and a half!  That got kind of frustrating especially when we didn’t know how long we would actually be fishing since we’d have a three year old in tow.  But we thought the experience would be worth it!  And it was!!


When we got to the lake no one else was there.  I thought that was good… that way Makenzie could kind of wander around without bothering anyone and we could do whatever without being “watched”.  (Little did we know that MAYBE it was because they all knew something we didn’t know!  And would soon learn.)  We hopped out of the truck and piled all of our gear into our big purple sled, including an old shanty we borrowed from Matt’s dad, 5 gallon buckets to sit on, our “bird seed” (sunflower seeds), fishing poles and tackle box.  Matt pulled that rig over a little creek we had to cross and I followed with Makenzie.

To be honest, I was TOTALLY nervous.  I rather save walking on water for Jesus to do.   

Down the ditch we go to cross the creek and SPLASH.  My right leg goes right down thru the snow into the creek.  Holy cow, really?  I was already scared to begin with and now my right leg is dangling in the water while I try using my other leg to pull myself up and arm to push Makenzie back.  If I can’t even cross a shallow creek without falling thru how are we going to go out on a lake?!?!?  Eek!

I got out and Makenzie and I both got to the other side where Matt was waiting.  We quickly talked about heading back home but decided after all the work that went into getting OUT there we were going.  So through some brush we went, water sloshing back and forth in my boot, to the lake.  My heart was stinkin’ racing.  The theory of ‘if Matt can walk on it I can’ went out the window the moment he crossed the creek and I went in. 

I walked slow.  One foot at a time, taking a deep breath each step.  There were a couple of times where my foot would sink a little from some of the top layers of snow and ice melting… I would hold in a scream so I didn’t scare Makenzie!  Every little bit Matt would use the ice auger to drill a hole to check how much ice there was and he would keep going.  Onward we went. 

There was a dead deer laying out on the ice that the coyotes had gotten.  What a little learning experience that was!  Oh the questions… how do you explain the cycle of life delicately to a 3 year old.  Whew.  Sure gave us something to talk about the few hours we were out there.

Matt found us a spot to fish, drilled some holes, scooped the ice out with the giant “poon” (spoon), popped up the ice shanty, put our worms on and showed us what to do.  Into the little “house” we went and the fishing began!  Wow was that ice deep!!!  I bet it was like two feet deep!!! After I was able to SEE that my heart rate went back down to normal.  It’s no wonder my wet foot wasn’t froze… I was too worried about falling thru to even remember that my foot was wet!  Ha!

 

We had SO MUCH FUN!!  The sun was shining, the wind had died down and I was out with two of my favorite people with nothing (besides the deer and coyote questions) to distract us.  It took a while for me to get the hang of it but once I did I was able to pull a fish out and so was Matt.  Makenzie sat with the pole, longer than I thought she would, but she is just a little squirmy worm that nothing was happening with her rod.   She was a good helper carrying the giant spoon as she followed Matt around to help scoop the ice out of the holes he was drilling. 



After she started getting a little antsy and I started getting cold, we packed up and headed back across the lake (followed some raccoon tracks and coyotes), thru the brush and back to the creek.  “Oh Boy!” I heard Matt say.  Poop, what’s that suppose to mean?  Well… remember when I said that people weren’t out on the lake and probably knew something we didn’t.  Here’s where that plays back in.  The creek was totally thawed out.  No snow, no ice on top.  Us on one side, our truck on the other.  Sweeeeet. 

Well we had to cross!  Matt grabs Makenzie and puts one foot in and down it goes.  WAY farther than either of us had thought.  He stumbled and took another step half falling over but getting Makenzie across.  For a second I thought they were BOTH going to go down.  As he stayed in the water I pushed our loaded purple sled to him and then he grabbed me and tossed me across.

At that point we put it into 5th gear and headed back to his parents to get Madison and head home.  Once we got there we ended up stripping down and putting some warm clothes on while ours dried in the dryer!  Haha!  Seriously… what an adventure!!  We surly won’t forget that anytime soon and although Makenzie probably won’t remember it I know she will remember the story!
